I attempted this gluten-free, vegan pie for dessert on Easter Sunday. We’ll see how this experiment ends up tasting.
I made this with rice flour instead of the almond flour the recipe calls for, and I imagine the crust wouldn’t be so crumbly if I had used coconut oil instead of coconut butter. It’s setting up overnight in the fridge, so we’ll all give it a try tomorrow.
